How to Make Chicken Parm Meatloaf Muffins

Step 1. Add all of your ingredients to a large bowl, including some chili flakes if you like a kick of heat.

Ingredients
 
 

  • 2 pounds ground chicken
  • â…“ cup grated parmigiano reggiano
  • 2 sundried tomatoes packed in oil minced
  • ÂĽ cup minced parsley
  • 2 cloves garlic grated
  • 2 teaspoons oregano
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • ½ teaspoon red pepper flakes optional
  • 1 cups marinara
  • â…” cup shredded parmigiano reggiano

Instructions
 

  1. Pre-heat oven to 350 degrees. Spray a muffin pan with non-stick spray and set aside.
  2. In a large bowl, combine first 9 ingredients (ground chicken through red pepper flakes) and mix well. Divide mixture evenly between 12 muffin cups.
    2 pounds ground chicken, 1/3 cup grated parmigiano reggiano, 2 sundried tomatoes packed in oil, 1/4 cup minced parsley, 2 cloves garlic, 2 teaspoons oregano, 2 teaspoons salt, 1 teaspoon pepper, 1/2 teaspoon red pepper flakes
  3. Using a small brush or spoon, spread marinara evenly on all muffin cups then sprinkle each with grated cheese. Bake for 15-18 minutes. Serve immediately.

Liz’s Notes

Store leftovers in an airtight container in the fridge for up to 4 days.
If you can’t find ground chicken, ground turkey is a great alternative.
