How to Make Garlic Rosemary Beef Tenderloin

Step 1. Take your fresh rosemary and mince it. Add it to a small bowl with the olive oil.

Step 2. Next use a microplane to grate your garlic into the bowl, and add salt and pepper. Stir together.

Step 3. Let your tenderloin sit and come to room temperature. Then pat dry, trim, and wrap in kitchen twine.

Step 4. Take your garlic rosemary mix and rub it on all sides of the tenderloin before moving to a prepared baking sheet.

Step 5. Roast in the oven at 425 until desired doneness is reached. Using an instant read meat thermometer, you want the internal temperature to reach somewhere between 135-150.

Step 6. Once removed from the oven, let rest for 10 minutes for juices to distribute. Then remove twine and slice to serve.

Garlic Rosemary Beef Tenderloin
Ingredients
- 2 pound beef tenderloin roast (trimmed and wrapped in kitchen twine )
- 1 tablespoon olive oil
- 1 tablespoon minced rosemary
- 3 cloves garlic (grated)
- 2 teaspoons salt
- 1 teaspoon pepper
Instructions
- Pre-heat oven to 425 degrees. Line a baking sheet with foil and spray with non-stick cooking spray; set aside. Let beef roast sit out at room temperature at least 30 minutes.
- In a small bowl, combine olive oil with rosemary, garlic, salt and pepper. Pat beef roast dry with paper towel then rub evenly with rosemary garlic rub on all sides.
- Insert instant read digital thermometer in thickest part of beef. Roast beef 35-45 minutes or until you've reached desired doneness (remove roast when meat thermometer registers 135°F for medium rare; 150°F for medium.)
- Remove from oven and tent with foil to let rest 10 minutes before slicing to serve.
