Ingredients

individual ingredients for rosemary beef tenderloin arrayed against a white surface.
  • Beef tenderloin: A cut of beef that usually cooks to be tender, juicy, and flavorful. Like all beef, it is nutritious as well as delicious, as it is a great source of iron.
  • Olive oil: Helps coat the beef in the rosemary and garlic.
  • Rosemary: Has a strong woodsy, earthy, and somewhat piney flavor that pairs very well with garlic.
  • Garlic: Pungent and aromatic, it’s somewhat nutty and spicy flavor sweetens as it cooks.

How to Make Garlic Rosemary Beef Tenderloin

Step 1. Take your fresh rosemary and mince it. Add it to a small bowl with the olive oil.

Step 2. Next use a microplane to grate your garlic into the bowl, and add salt and pepper. Stir together.

Step 3. Let your tenderloin sit and come to room temperature. Then pat dry, trim, and wrap in kitchen twine.

Step 4. Take your garlic rosemary mix and rub it on all sides of the tenderloin before moving to a prepared baking sheet.

Step 5. Roast in the oven at 425 until desired doneness is reached. Using an instant read meat thermometer, you want the internal temperature to reach somewhere between 135-150.

Step 6. Once removed from the oven, let rest for 10 minutes for juices to distribute. Then remove twine and slice to serve.

Liz’s Notes

I like to let my beef roast come to room temperature about 30-45 minutes sitting on the counter before placing in the oven. I find this helps reduce shrinkage when roasting. You can also season with a little salt and pepper at this time.
