Chopped Veggie Slaw with Jalapeño Lime Vinaigrette

    Chopped cabbage, peppers, carrots and scallions are tossed with a sweet and spicy jalapeño vinaigrette. This fresh and easy chopped veggie slaw is ideal for entertaining, potlucks, cookouts and more.

    I love fresh veggie slaws with just about any dinner. Whether I’m firing up the grill or roasting salmon, I love the added crunch and acidity that slaws provide. Not only are slaws the ultimate side dish they also make a delicious topping on various kinds of sandwiches, tacos and more.

    Herbed Slaw with Jalapeno Lime Vinaigrette

    Most recently I created a fresh veggie slaw using two types of cabbage, shredded carrots, scallions and fresh herbs. To drizzle, I whisked together a sweet and spicy jalapeño lime vinaigrette. Quick, simple and easy to make, this slaw will become a go-to recipe when you want to serve up flavor and nutrition in 10 minutes!

    How to Make Chopped Veggie Slaw with Jalapeño Lime Vinaigrette

    To get started, prepare the fresh vegetables and chop them, starting with cabbage. This recipe calls for both red and green cabbage, and you will reap the nutrition benefits of both!

    First, chop and add green cabbage. Green cabbage is packed with nutrients and fiber, folate, magnesium, potassium and vitamins A and K.

    Second, chop and add red cabbage, which is also rich in antioxidants (and contains 10x more vitamins and flavonoids than its family member, green cabbage!) Third, seed and chop the bell pepper.

    Prepare the Bell Pepper for the Chopped Veggie Slaw

    The easiest way to seed a bell pepper is to cut each pepper in half from top to bottom or into quarters. Take one pepper half or quarter and slide the tip of a small knife under the attached seeds and membranes to cut them out. Remove any extra seeds by turning the pepper piece over and tap lightly. Once you’re done preparing the bell pepper, add it to the bowl.

    Next, add sliced carrots and cilantro. Your slaw mixture is almost ready (minus the vinaigrette), you just need one more ingredient!

    As the last step, dice a cup of scallions and add them to the mix. Scallions are one of my favorite low-calorie ways to amp up the flavor. Plus, they boast flavonoid antioxidants, plant fiber, and minerals and vitamins that have proven health benefits.

    After you dice the scallions, add them to your colorful slaw mixture and mix the ingredients well. Now, you only need the vinaigrette.

    After you prep the slaw, it’s time to create the vinaigrette. You can create the vinaigrette in the measuring cup for ease or a separate bowl, whichever you prefer. First, grate the garlic using a microplane. I like to use a microplane because it turns the garlic into a creamy paste which practically dissolves in the vinaigrette.

    Next, add one tablespoon of honey (my favorite!) to sweeten things up. This is a great recipe to incorporate raw honey if you can get your hands on some. Raw honey has many health benefits, including containing tons of antioxidants!

    Next, add smoked paprika, cumin, salt and pepper. After you add the seasoning, zest and juice lime for a tangy boost. It’s optional to add the minced jalapeño, however if you’re a jalapeño fan, you’ll love the added spiciness!

    Finally, whisk all the fresh, flavorful ingredients together and add olive oil. Drizzle vinaigrette over the slaw and toss the mixture well.

    As usual, make sure to season your fresh slaw with additional salt and pepper to taste.

    And there you have it! It only took 10 minutes to create this dish that is bolstering with flavor.

    What is the difference between red and green cabbage?

    Red cabbage is a bit bitter and offers more health benefits than green cabbage. By pairing both in this recipe, they are a great balance of taste and nutrition.

    Can slaw be dressed in advance without wilting?

    Yes! Cabbage is sturdy enough that it won’t wilt.

    How long is slaw good for?

    Usually, you can enjoy slaw for about three days. Keep it in an airtight container in the refrigerator.

    Is the vinaigrette spicy?

    The vinaigrette will have a little kick. To keep it mild, remove the seeds and pith of the jalapeño which is where the heat lives.

    Can I use other types of chili peppers?

    Absolutely! Red chili peppers or serrano chilis would work well too depending on heat preference.

    Ingredients
     

    • 2 cups chopped green cabbage
    • 2 cups chopped red cabbage
    • 1 cup shredded carrots
    • 1 red bell pepper (seeded and chopped)
    • 1 cup diced scallions
    • 1 cup cilantro (minced)

    Jalapeno Lime Vinaigrette

    • 1 lime (zested and juiced)
    • 2 tablespoons extra virgin olive oil
    • 2 tablespoons minced jalapeno (optional)
    • 1 clove garlic (minced)
    • 1 tablespoon honey
    • 1 teaspoon smoked paprika
    • 1 teaspoon cumin
    • salt and pepper (to taste)

    Instructions
     

    • Place all the slaw ingredients in a large bowl; set aside.
    • In a medium bowl, whisk together the vinaigrette ingredients. Check for seasoning and adjust accordingly. Drizzle vinaigrette over the slaw and toss well. Season with additional salt and pepper to taste.
