One of the easiest and most delicious ways to boost the nutrition in your diet is to incorporate more meatless meals. Even just one vegetarian dinner recipe a week is a great way to get out of your comfort zone. It also allows you to try new vegetables, and stretch your weekly food budget.

Loaded with seasonal vegetables and bursting with flavor, these recipes are simple, easy and very filling. In fact, your family may not even notice they’re eating vegetarian meals.
Benefits of Eating Meatless
Eating vegetarian dishes one or two times a week is a great way to get an added boost of vitamins, nutrients and antioxidants. A plant-based diet, which emphasizes fruits, vegetables, grains, beans, legumes and nuts, is rich in fiber, vitamins and other nutrients. And people who don’t eat meat — vegetarians — generally eat fewer calories and less fat, weigh less, and have a lower risk of heart disease than non-vegetarians do.
Frequently Asked Questions
Can I add protein to these dishes?
Absolutely! For example, I love adding shrimp to the garlic roasted vegetable pasta or tossing shredded chicken on the pesto pizza.
Are these vegetarian dinners freezer-friendly?
The soups, stews, curries and casseroles are great to freeze and will often last up to 3 months in the freezer; however, I don’t recommend freezing pizza or pasta.
Will I save money by eating vegetarian dishes?
You just might! Minus some delicacies, pound-for-pound plant foods tend to cost less. If you’re on a budget and trying to eat healthy, I highly recommend trying to eat at least one vegetarian dinner option a week.
Are these meals filling? Will I still be hungry?
These vegetarian dinner recipes are VERY satisfying. Loaded with veggies and hearty grains, these dishes are flavorful and will leave you feeling full. With lots of different options, including many different cuisines, I encourage you to give them a try!

I like incorporating meatless meals into my plan, but a lot of times I worry about the lack of protein in meatless recipes – not because I think meat is the only way to get protein, but because a lot of the recipes seem to have no protein at all or minimal amounts. As an example, for me the Quick & Easy Sweet Potato Curry on your list is a no go because there is no real protein source. I will just make sure I find vegetarian recipes that meet my needs.
Hi Susan – I think you make a very valid point. Everyone has different dietary needs and I know while many American’s struggle to get enough protein in their diet, many of us exceed the amount we *need* every day as well. That would be for you to discuss with a nutritionist of course but I hope some of these inspire you to add a few meatless meals into your routine from time to time – if anything because they are delicious. :)
