This thick and creamy strawberry chocolate mint smoothie is naturally vegan and made with juicy strawberries, cocoa, and fresh mint.

You already know I love making smoothies every morning and one way I never tire of my daily smoothie is by changing up the ingredients almost daily.

Using the seasons as guidance, I love making smoothies with blueberries in July, peaches in August, pumpkin in October and oranges in January. Of course, once spring hits, I love using strawberries – the first fresh fruit to hit shelves every year.

One way I make my smoothies extra special is to add in fresh herbs such as the fresh mint I used in this chocolate strawberry mint smoothie. Similar to a chocolate mint milkshake, fresh mint adds a floral aroma that brings out the warm chocolate and sweet berries. In green smoothies, I like to add cilantro or parsley as well for the same reason.

Type of coconut milk
I recommend full-fat, Thai style coconut milk when making smoothies. This keeps the smoothie thick and creamy. What can you use if you don’t have coconut milk? Any type of milk or yogurt works or you can use water. Note: if you don’t have coconut milk, a bit of avocado can provide the same silky, creaminess factor without impacting the flavor much. Another idea is to add a tablespoon of coconut oil.
Is it best to use fresh or frozen fruit in smoothies?
My general rule of thumb is to use fresh fruit when it’s in season or frozen fruit when it’s out of season. For example, in June when strawberries are in season here in Michigan we will pick 10 pounds and freeze them to use throughout the year in smoothies. Vegan Strawberry Chocolate Mint Smoothie

Ingredients
- 1 cup strawberries (fresh or frozen)
- 1 banana
- ⅔ cup full fat coconut milk (Thai style)
- 2 tablespoons flax seed (ground or whole)
- 1 teaspoon vanilla
- 2 tablespoons cocoa powder
- 2 tablespoons fresh mint
- 1 cup ice
Instructions
- Place all ingredients in a high speed blender and puree until smooth. Divide between two glasses.
