A fun twist on the traditional recipe, this Cucumber Pico de Gallo is made with juicy tomatoes, crunchy cucumbers, cilantro, onion, and lime juice. Fresh, tasty, and perfect for snacking or using as a topping on beef or chicken.

The holidays bring all sorts of delicious treats and goodies. While it’s totally fine to indulge in some sweets now and then, if your kids are like mine, they might be getting a little sugar overloaded. I like to break up the train of endless sugar with easy, healthy finger foods that adults and kids alike will love! Tomato Caprese Skewers with Pesto or Fruit and Cheese Kabobs use fresh ingredients, and are some of my go-tos.

For another quick, delicious, and healthy snack to add to my kid’s rotation, I whipped up this Cucumber Pico de Gallo with SUNSET’s Qukes (which are the cutest tiny cucumbers that are perfect for snacking on all on their own). Easy to set out on the counter for healthy snacking amidst all the treats, I’m sure your family will love it, too!

Ingredients

  • Tomatoes: Grape or cherry tomatoes are my favorite to use as you can just cut them in halves or in quarters, and SUNSET Angel Sweet are juicy and sweet.
  • Cucumber: SUNSET Qukes are tiny and full of crunch. Full of vitamins, they add flavor, texture, and nutrition to the pico.
  • Onion: I use a sweet onion for mild flavor that blends well with the other ingredients. You could also use red onion.
  • Cilantro: A bit lemony in flavor, fresh cilantro adds bright freshness to the pico.
  • Lime juice: Adds some zest and bright citrus.
  • Garlic: A bit nutty and aromatic flavor.

What to Serve with Pico de Gallo

The classic pairing is tortilla chips, and while store-bought would be fine, you can be a little extra and make baked tortilla chips at home. Baked pita chips are another great option!

How to Make Cucumber Pico de Gallo

Step 1. Start by peeling and dicing your onion and garlic.

Step 2. Next dice your cucumber, the qukes don’t need to be peeled!

Step 3. Cut your tomatoes into halves or quarters, depending on their size. If you and your family like a little spice, you can also dice a serrano or jalapeño pepper.

Step 4. Add all ingredients to a large bowl and stir until evenly mixed.

Pico de gallo could be considered a chunky salsa, but most traditional salsa is much more liquidy and uses more ingredients. The beauty of a pico de gallo is it’s simplicity.

Ingredients
 

  • 1 cup cherry tomatoes, halved (SUNSET Angel Sweet)
  • 1 cup diced cucumber (SUNSET Qukes)
  • 1 medium onion (minced)
  • 1 cup cilantro (minced)
  • 1 serrano (minced – optional)
  • ½ cup lime juice ((about two limes))
  • 1 clove garlic (minced)
  • salt and pepper to taste
  • tortilla chips to serve (optional)

Instructions
 

  • Place the first seven ingredients in a large bowl (tomatoes through garlic) and toss well. Season with salt and pepper to taste and serve with tortilla chips if you wish.

To keep the dish mild, omit the serrano pepper. For medium heat, remove most of the seeds and pith. To keep the dip spicy, minced the pepper whole including the seeds.
This dish is great for prepping ahead!
