Game Day is right around the corner and I don’t know about you but I am all in for anything that involves a day of eating appetizers like black bean dip, crispy oven baked wings or cheesy baked hummus dip. Are you hosting friends? Heading to a party? Either way you roll, I’ve got you covered.

My fresh and flavorful pico de gallo recipe couldn’t be easier to make if I tried. You simply toss together roma tomatoes with red onion, minced jalapeño, fresh garlic, cilantro and lime juice. I also love making a cucumber pico de gallo.

Season to taste with salt and pepper and you’ll quickly find yourself unable to stop after just one bite.

Fortunately, at just 14 calories per quarter cup serving, you don’t have to stop any time soon. Serve with your favorite tortilla chips and you’re ready to roll.

Ingredients
 
 

  • 6 roma tomatoes diced
  • 1 cup red onion minced
  • 1 cup cilantro minced
  • 1 jalapeño minced
  • ½ cup lime juice (about two limes)
  • 2 cloves garlic minced
  • salt and pepper to taste
  • tortilla chips to serve optional

Instructions
 

  1. Place the first six ingredients in a large bowl and toss well. Season with salt and pepper to taste and serve with tortilla chips if you wish.

Liz’s Notes

To keep the dish mild, omit the jalapeño peppers. For medium heat, remove most of the seeds and pith. To keep the dip spicy, minced the pepper whole including the seeds.
