It shouldn’t be surprising that we eat a lot of Lebanese and Middle-Eastern cuisine in our house. My boys and I love these Shish Tawook Pitas with Hummus, and they come together super quickly for the perfect lunch, or an easy dinner! The star of this dish is tender, juicy chicken tawook, which is great for meal prep and can be made ahead of time!
Ingredients

- Pita bread: Large white or wheat pita bread work great for these wraps.
- Hummus: A creamy, delicious spread made from chickpeas and tahini, you can use either homemade or store-bought.
- Shish tawook chicken: A delicious Middle-Eastern chicken dish that is marinated in lemon, garlic, olive oil, and sometimes yogurt.
- Tomato: Juicy, bright, somewhat acidic flavor.
- Red onion: Crunchy, somewhat sweet and spicy. If you think the flavor is too strong, you can always soak in some cold water before using.
- Pickles: I love the crunchy, dill flavor from the pickle slices.
- Pickled turnips: A customary pickle of the Middle East, they are crunchy, tangy, and just a little bit vinegary. They taste great of gyros, kebabs, falafel, salads, and more!
How to Make Shish Tawook Pita with Hummus

To make Lebanese shish tawook, you simply marinate chicken breast cubes in lemon juice, garlic, olive oil, and salt. Then, you can either pan-fry it, skewer and grill it, or bake it in the oven.

Start assembling your pita sandwich by spreading hummus in the center of a pita.

Then layer the tomato and red onion slices on top.

Next add the shish tawook chicken.

And finish with pickles, pickled turnips, and some fresh herbs. I love to dip this wrap in labneh with olive oil and za’atar for some extra flavor!

Then tightly roll and wrap the pita, using a toothpick if needed to keep it closed. Cut in half, serve, and enjoy your Shish Tawook Pita with Hummus!

Lebanese Shish Tawook Pita with Hummus
Ingredients
- 4 large pita bread (white or flour)
- 1 cup hummus (store-bought or homemade)
- 4 servings shish tawook chicken (prepared according to recipe)
- ½ cup tomato slices
- ½ cup red onion (thinly sliced)
- 12 dill pickle slices
- ¼ cup pickled turnips (optional)
Instructions
- Working one at a time, lay pita on a plate or a piece of wax paper. Spread 1/4 cup of hummus in the center of the pita then top with 1 serving of the chicken, tomato slices, onion slices, pickle slices and pickled turnips.
- Starting at the bottom, carefully fold the bottom of the pita bread over the top of the meat and other toppings. Roll tightly until pita is formed (no need to tuck in the sides.) Slice in half to serve.
