With our busy schedules, we don’t always have a lot of time. That’s why I love to have some quick, kid-friendly meals planned that I can make quickly so we can have that time together!

With fresh, local ingredients found at your local D&W Fresh Market, you can whip up these Zucchini Pizza Boats in around 20 minutes! Even if it’s just once a week, a delicious and healthy meal makes it easier to gather your family around the table.

Ingredients

  • Zucchini: A mild summer squash that is full of vitamins.
  • Olive oil: Used to coat the zucchini so it gets an even roast.
  • Oregano: An earthy, slightly sweet herb common in pizza.
  • Marinara sauce: Rich, umami, tomato flavor for a classic pizza sauce taste.
  • Italian sausage: I usually stick with mild Italian sausage, but if your kids like more of a kick, you can use something more intense!
  • Mozzarella & parmesan cheese: Mozzarella gives the classic pizza taste, while the parmesan adds another layer of nutty, salty flavor.

Easy Substitutions

  • Swap the protein. I love the kick I get from the sausage, but you can use ground beef, or go totally classic pizza and top with pepperoni!
  • Switch the squash. Instead of zucchini, you could use yellow or straight neck squash.
  • Add more toppings. You can really treat these like any other pizza, and do whatever you like when it comes to topping! Change the cheese, change the sauce, do what you like!

How to Make Zucchini Pizza Boats

Step 1. Cook your sausage over medium-high heat in a large skillet, crumbling into small pieces.

Step 2. Cook sausage until browned. While sausage cooks, coat zucchini halves in olive oil, oregano, salt and pepper, and roast for 15 minutes in an oven at 400 degrees.

Step 3. Remove roasted zucchini from oven, then top each with marinara sauce, sausage, and cheese mixture.

Step 4. Toss back in the oven and broil for about 3 minutes, until cheese is melted and browned.

Top with fresh basil or red chili flakes, then serve and enjoy your Zucchini Pizza Boats!

Frequently Asked Questions

Can you freeze zucchini pizza boats?

While I think freezing shredded zucchini works well, freezing zucchini otherwise isn’t great as it gets especially mushy upon thawing.

Can you cook zucchini in the air fryer?

Yes! Preheating your air fryer to 375, set the zucchini in an even, single layer in the air fryer and cook for 10-12 minutes!

Is zucchini good on pizza?

Yes, zucchini is a common topping on veggie pizzas!

Ingredients
 

  • 4 medium zucchini
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • salt and pepper (to taste )
  • 1 cup marinara sauce (or pizza sauce)
  • 1 pound Italian sausage
  • 16 ounces shredded part-skim mozzarella
  • ¼ cup grated Parmesan cheese
  • fresh basil and chili flakes (optional garnish)

Instructions
 

  • Pre-heat oven to 400 degrees. Halve each zucchini horizontally and carefully scoop out the flesh of each zucchini half to create a well.

  • Place the zucchini on a prepared baking sheet, cut size up, and drizzle with olive oil, salt, pepper and oregano. Roast for 15-18 minutes then set aside.

  • While zucchini is roasting, heat a medium saute pan over medium-high heat and add Italian sausage. Using a wooden spoon, carefully break up the Italian sausage into bite-sized crumbles. Saute until sausage is browned and cooked through, about 9-11 minutes total; set aside.

  • Remove zucchini from oven and pat any moisture that may have accumulated with paper towel. Spread about two tablespoons of marinara sauce in the middle of each zucchini half then top with cooked Italian sausage crumbles, mozzarella cheese and a sprinkle of parmesan. Repeat until all halves are filled then bake for 5 minutes before turning oven to broil then broiling for 3-4 minutes until golden brown. Serve with optional garnish of fresh basil and chili flakes.
    1 cup marinara sauce, 16 ounces shredded part-skim mozzarella, 1/4 cup grated Parmesan cheese, fresh basil and chili flakes
