If you buy your cauliflower at the right time, you’ll find that they can get HUGE! If you’ve never tried making cauliflower steaks at home, you should definitely give it a try! And since we all know I always have za’atar on hand, I couldn’t resist giving these beauties a Lebanese twist. Speaking of za’atar, I love eating this with a side of pita chips with za’atar and hummus or my flavorful syrian salad. So I give to you, Za’atar Crusted Cauliflower Steaks, a vegan and vegetarian dish that anyone will love.

  • Cauliflower: A firm vegetable with a sweet and nutty flavor, it’s high in fiber and B vitamins.
  • Za’atar: Made with thyme, sumac, sesame seeds, and other spices, za’atar is my favorite all purpose spice.
  • Olive oil: Heart healthy oil that helps to coat the cauliflower steaks and adhere the spices.
  • Salt & pepper: Seasons and enhances the natural flavors.

How to Make Za’atar Crusted Cauliflower Steaks

Step 1. Trim the stem and leaves from your cauliflower and cut the head into thick slices, about 3/4 of an inch to an inch thick.

Step 2. Then lay your cauliflower steaks on a prepared baking sheet and drizzle or brush with olive oil on both sides.

Step 3. Next give a healthy sprinkle of za’atar over everything, getting both sides.

Step 4. Finish with some salt and black pepper before tossing in the oven at 425 for about 20-25 minutes.

  • 1 large head cauliflower sliced into thick steaks
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons za’atar
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  1. Preheat oven to 425 degrees and lay cauliflower steaks in a single layer on a baking sheet.

  2. Drizzle cauliflower with olive oil on both sides and sprinkle evenly with za’atar, salt and pepper.
    2 tablespoons extra virgin olive oil, 2 tablespoons za’atar, 1 teaspoon salt, 1/2 teaspoon pepper
  3. Roast until crispy, about 20-25 minutes.

    I can’t wait to try this. What is the fresh green leafy herb that’s sprinkled on top? Parsley, mint, cilantro? Do you put it on after baking?
